How Custom Freezer Meat Works

Our custom beef is exactly that: cut and packaged just the way you like it.

The processor will call you to go over all of the many options.

You can choose from a full array of ground beef, roasts, steaks, ribs, soup bones, and more. If you use mostly ground beef and steaks, they can save the best steaks and grind all of the other cuts to get you the most ground beef possible.

They will package everything according to your directions, such as putting two or four steaks in each pack so it's easy to thaw a pack and know it's perfect for your family.

When your meat is ready, they'll call you to pick it up.

You'll pay us for the meat, pay the processor for their services, and go home to start enjoying your delicious bounty.

 

ABOUT HANGING WEIGHT:

If you're shopping around, you'll notice that most custom beef is priced based on hanging weight. Our current beef price is $2.50 per pound of hanging weight. That is as it hangs in big pieces in the cooler to age, before it is cut and trimmed. How many pounds you actually bring home varies a lot depending on whether you choose boneless or bone-in cuts, and how much fat they have to trim off. This is another advantage of lean beef like ours - less waste. A typical take home weight is about half of the hanging weight. Our average quarters weigh around 200# hanging weight.

To get the most value out of your purchase, say yes to "extras" such as soup bones (they make wonderful broth), suet (like lard), maybe even organ meats. The processor will keep whatever you don't want, but it can be a fun challenge to learn to use every bit.
